Grill corn: there are a lot of ways to grill corn, but this is my very favorite method!

This is the best way to serve corn, period.


With flavors of sweet corn, cotija cheese, lime, chili powder, mayonnaise, and cilantro, the flavors of elote have inspired many other recipes. The main skill in how to make elote is grilling corn. You can find this staple at fairs and from street vendors in Central America.

Elote means "corn cob" in Spanish, but it's also the name given to a famous Mexican street corn dish. (This also works on a grill pan!)

How to make elote.

Elote, which directly translates to corn on the cob, is corn on the cob that has been roasted or grilled and then slathered in a delicious combination of butter, mayonnaise, queso fresco (a crumbly Mexican cheese), and ground chili powder or cayenne pepper to taste. Where is elote popular?

It is also sometimes called “crazy corn”. These elotes are grilled until charred and nutty; slathered with a creamy sauce seasoned with garlic, chili powder, crema, cilantro, and Cotija cheese; and served with a coating of extra Cotija cheese and a squeeze of lime. Begin by peeling back husks and removing the silk. Peel back the corn husks and tie them with twine to make a built-in handle for eating the corn. Rub vegetable oil on all sides of the corn and sprinkle lightly with salt and pepper. “Elote” translates to “corn cob”, so it’s obvious how this Mexican favorite got its name. How to make elote.

Then place the cobs right on the grill and char to perfection.

There are lots of different methods for how to grill corn, but here’s what we think is the best way.
Place on heated grill (400 degrees F) and rotate every 3-4 minutes or until charred. They'll disappear from your next picnic table faster than you can grill 'em.
